Zucchini Bake






Zucchini Bake:
1 C Bisquick
3 C Zucchini (shredded)
1/4 C Onion (diced)
1/4 Parmesan (grated)
4 Eggs (lightly beaten)
1/4 tsp black pepper
1/4 tsp oregano
1/2 tsp salt
2 Tbs parsley
Dash of Garlic Powder

Mix all in one bowl. Then pour into 9 x 13 baking dish sprayed with cooking spray. Bake for 30 minutes at 350.

Serves 12
2 points per serving

Day 5

Cardio Fix
No equipment necessary but have lots of water! This is a fun workout and moves quickly!!!!

Day 2, 3, and 4

Day 2
After Day 1 with Total Body Cardio, I was sore! This always happens the first week. I still did the Upper Fix using 8 lbs weights. Next week I am upping my weight to 10!

Day 3
Lower Fix goes by quickly. Make sure you have perfect posture when doing the exercises. I tweaked my knee a bit doing this video. That's what you get when you already have bad knees from running!

Day 4
I am sad to say I didn't do my Pilates Fix. There should be no excuse but after a doctor's appointment and a 13 hour work day, I was done.

Total Body Cardio

I am starting the 21 Day Fix again. A friend of mine started with a group today, and I decided to piggy back on to it.

Today's workout was Total Body Cardio. It requires weights and a mat. The workout is only 30 minutes. It goes by quickly.

As for the food plan, it is really hard to stay on track. I ended up going grocery shopping and getting a ton of fruits and vegetables.

Tomorrow will be busy, but I am definitely motivated to doing the Upper Fix. That is one of my favorite workouts in the set.

21 Day Fix: Days 1 & 2

Day 1:

I just found my 21 Day Fix DVDs since my move. Unfortunately the quality is terrible. The DVDs skip and don't work all of the time. I have only used the DVDs once before for 21 days.

On that note, I started Day 1 on Sunday. The workout I did was the Total Body Cardio Fix. Since I am already used to working out, the video didn't seem hard. I definitely felt it the next day! It felt great!!! The only down side is that my DVD skipped at the end. Hopefully it will work next week!

Day 2:

Today I did the Upper Fix using 8lb weights and resistance bands. After my workout, I went for a 50 minute walk. It is a beautiful day out.

I am going to try to get through the entire 21 days with cardio workouts throughout.

Trader Joe's Reviews from my Italian Boyfriend

Recently, I have gotten my Italian boyfriend on the healthy eating track. He was very apprehensive, so I had him come to Trader Joe's with me to pick out meals he wanted to eat. Here are his (and a few of my) reviews on some Trader Joe's foods.





Falafel Wrap:

MIKE: Satisfied. It was pretty good. I would do it again.

Caprese Sandwich:

ME: ehhhh. Not worth it. It was good but not great.

Chicken Breast Medallions with Coconut Red Curry Sauce:

MIKE: That was f*cking awesome. I want this again!

So far, these have been some great finds! Mike is normally of the mindset that only unhealthy food tastes good. This is showing him that healthy, organic food tastes even better.

Zucchini Spaghetti with Tomato and Pepper Sauce

This is an easy, healthy alternative to a pasta dish.  If you would like to, you could add grilled chicken or shrimp.  



Ingredients:

- 5 zucchinis

- 1 small red onion

- 1 yellow bell pepper

- 2 Roma tomatoes

- Can of diced tomatoes

- 5 cloves of garlic minced

- Olive oil

- Salt and pepper

- Garlic and herb Mrs. Dash



Using a julienne peeler, Peel all five zucchinis into spaghetti strips.



Put into a strainer and salt. Let water drain for 30 minutes. Rinse and pat dry with paper towels.





































Dice red onion, tomatoes, bell peppers and set aside in a separate bowl. Mince all cloves of garlic and add to the bowl.





































Open can of diced tomatoes and drain.





































With heat on medium low, but zucchini spaghetti in and cook stirring occasionally for two minutes.





































Move zucchini to one side of the pan.





































Pour approximately 2 tablespoons of olive oil on the empty side and add the bowl of ingredients and seasonings (to taste).







































Keeping
zucchini separate from the vegetable mix continue to stir the
vegetables and the zucchini for approximately five minutes.






































Stir all ingredients together adding the can of diced tomatoes. Keep stirring for a few minutes until warm.



Serve immediately.

Breakfast Crepes

Ingredients:
1 1/3 C Flour
2 C Milk
1 Egg
1/2 tsp Baking Powder
1 Tbs Vegetable Oil
2 Tbs Sugar

Mix all ingredients well making sure there are no lumps.

Heat a small frying sprayed with cooking spray. Spoon batter into the pan. Slightly tilt pan to fill the pan. Cook 1 to 2 minutes until bubbles form in the batter. Flip and cook 1 to 2 minutes on the other side. Repeat until batter is gone.

Makes 8 - 10 Crepes



Fill each crepe with desired filling (peanut butter, Nutella, banana, strawberries, jam). Sprinkle powdered sugar to garnish.

Stuffed Peppers

Ingredients:
3-4 Bell Peppers
1 Small Yellow Onion
1 lb Ground Turkey
2 c. Brown Rice
1 1/2 c. Reduced Fat Cheddar
Salt, Pepper, Garlic Powder

Cut the tops off the peppers and remove the seeds. Use the tops and dice. Then dice the onion and combine in a bowl with the diced pepper. Season the ground turkey with salt, pepper, and garlic powder.



















In a skillet, cook the ground turkey, onion, and peppers until brown. Strain.



















Place the hollowed peppers in a microwave safe dish and microwave for three minutes.

Cook rice per directions on box. I typically use rice that we made earlier in the week.



















Combine all ingredients in a bowl along with 1 cup of cheddar cheese (shredded) and stir.



















Spoon mixture into the hallowed peppers. Top peppers with remaining cheddar cheese. Cover with aluminum foil and bake at 350° for 30 minutes.



















I use a casserole dish to put any extra mixture and bake covered.
